Three Days of Great Meals...

Sorry I've been a bit lax... got too busy. So here are three great meals and links to enjoy... :o)

Tuesday Night: 

Wednesday Night: Teriyaki Stir Fry
(Recipe Below)

1 container (16 oz ea.), Teriyaki Pork Loin
0.25 cup chopped, Carrots, raw
0.50 cup, Sauce, teriyaki, ready-to-serve
0.50 cup chopped, Celery, raw
0.50 cup, chopped, Cabbage, raw
0.50 cup, chopped, Onions, raw
5 Large, Mushrooms
0.50 cup, Cauliflower riced & sauteed in butter

Cook meat separately and set aside. Saute cauliflower in butter for 2 minutes. Stir fry vegges. Lay down cauliflower in bottom of bowl, cover with veggies and then meat. Add soy sauce and sesame seeds-



It's Pizza and yet... it's not!

Okay, I was not a believer. Pizza crust made from cheese and cauliflower? Seriously? But I followed the recipe, cooked it to perfection and now I have been saved! I AM a believer! I'm not a fan of pepperoni, so  we went with sausage, olives, mushrooms and tomatoes and man, what an amazing treat! Without the carbs too! Anyway, I highly recommend his one. I have a very happy tummy... M;o)

Tonight we dine on the Mediterranean!

Had a lovely meal with a Medi flare that was very savory and exciting. My husband outdid himself. WTG, my darling! M;o)

Thought I'd just do a weekly recipe round up with links to recipes we've found over the last week. This one will be for all the recipes so far, but in the future it will just be new ones. What a miracle is eggs, cream cheese and cheddar...

Low Carb Taco Bake
Matt made me a keto Taco Bake tonight and we would will be coming back to this again and again. The crust is eggs, cream cheese and cheddar pre-baked, then smothered in seasoned ground beef (the same great Taco Bell Seasoning we love to use), more cheese, tomatoes and other goodness then baked until everything melds into a lovely pile of deliciousness. Yum... Recipe is on the photo. Highly recommended, very filling and definitely satisfying. The portion is small but with sour cream, salsa, green onions and olives it really hits the spot. Enjoy! Pretty food... and fake rice...

Chicken Cauliflower Rice Bowl
We experimented tonight with cauliflower rice and it turned out okay. But the dish itself was gorgeous and tasty. Siracha was also on the experimental list... had to mix more mayo into it to make it cool enough to use on the dish. I am such a light weight! I love savory... I love tangy... I love sweet and creamy and crunchy and even tart, but hot? Not so much. Anyway, hubbers did a great job and look how beautiful! Enjoy... M;o)

My poor husband... I made him spirialize broccoli tonight and it was grueling... I guess next time we need larger stems... the store didn't have anything longer than about 5", much too short. Anyway, he pulled off a miracle and the dish was delicious! I do love him so very much... especially when he doesn't complain about short broccoli. Pork chops were sublime with a herb crust. Yum yum... best thing ever after a very busy day.

Puppy Guarding the Herbs
Worked on the garden today... Matt and I put in another raised bed for the tomatoes. Not sure why I keep planting the miserable things; they never pan out for me, but I'm a glutton for punishment I guess. Anyway, here's a lovely picture of Matt working on the final touches. I'm exhausted. I had egg foo young (using heavy cream instead of half n half) for lunch (yum) and bacon wrapped chicken meat balls for dinner, with cottage cheese and tomato/cucumber salad. And then fell down... ;o)
