STRUGGLES WITH CONTROLLING SUGAR & LOSING WEIGHT

 As I get older, it is getting increasingly harder and harder to control my diabetes and lose weight. Recently, I did extensive research on Keto, Mediterranean, DASH, ADA-recommended foods, etc. etc. It's been exhausting! Anyway, I finally came up with a great balance of Macronutrients that works for me. I'll post a new menu every day for anyone interested. My BS is down to around 110 in the morning, which is amazing for me. My Macros are currently: Calories - 1500, Carbs - 45%, Fats - 30% (note: I'm trying to stay with only olive oil), Protein - 25%. *Cucumber and Roasted Red Pepper Wrap - NOTE: I used low-carb tortilla wrap instead of regular - You can use store-bought
hummus or make your own. Canned Garbonza beans, roasted red peppers, garlic, lemon, and olive oil mixed until well-blended.

Creamy Balsamic Vinegar Dressing: 
1/4 cup Mayo
2 Tbsp Balsamic Vinegar
1 tsp dried chives
1 clove of garlic
1 Lemon, Juiced
Pinch Lemon Pepper (or black pepper)
1 tsp dried parsley

Blend all ingredients in a food processor until rich and creamy. Serving = 2 tbsp

  1. Hubby was just diagnosed as diabetic and we've been trying to find foods to help him lower his numbers. He is getting tired of salads!
